This explanation is based on my personal experience with gluten and it's effects on me.  I had eaten foods with gluten all my life, so I really didn't know I had symptoms of being gluten intolerant.  I simply thought that is how my digestive system worked.  And, by that I mean that I thought having an "upset stomach" was just part of life.  I had tried a number of things...cutting out greasy foods, cutting out spicy foods, cutting out milk products, drinking more water, eating more fiber...I tried it all, but it seemed like I had digestive problems no matter what I did, or didn't do.  After hearing Robb Wolf talk about gluten's effects on EVERYONE'S small intestines, I decided to test the information for myself.  I completely eliminated all gluten from my diet.  After just a few days, the results were so dramatic that I could hardly believe I had lived my whole life dealing with all the uncomfortable results of eating gluten.  So, this is not necessarily an answer to your question, but it might give you some perspective.  Search the Internet for "symptoms of gluten intolerance" or "symptoms of gluten sensitivity"...you'll find things like:
"abdominal bloating or pain, diarrhea, constipation, gaseousness, or nausea with or without vomiting.  It appears that acid reflux in the esophagus, manifesting as heartburn, may be a potential symptom as well.  Other symptoms people experience include fatigue, joint pains, mouth ulcers, bone pain, abnormal menses in women, and infertility."  (from Finer Health and Nutrition)
So, here's my challenge to you Kim:  completely eliminate gluten from your diet for one month without changing any other dietary habits...see how you are effected.  (Like Robb Wolf says:   "Try it and let me know."  If you don't see a change, then you probably don't have an intolerance to gluten like me.  When I eliminated gluten from my diet, I immediately had more energy, I was less gassy and bloated (like I had been for most of my life), and my heartburn went away (I had to take an acid reducer pill at least once per day until I eliminated gluten).  I very rarely eat gluten now...I think it's worth a try to see how it effects you.  Let me know if you want to chat about this some more!
